These premium persimmons are much bigger in size compared to their American counterparts. Only available for a brief harvest season in October, these delicacies are easy to miss if you're not quick. A Little Green is Good:
If your persimmons have a touch of green on the skin near their tops, that's great news! It signals that the fruit is at its crispy peak, ready for the most satisfying first bite of autumn.

Striations Signal Sweetness:
Striations are crack-like streaks you can find at the bottom of Taishu Persimmons as they ripen. Called "jomon" in Japanese, they signal high sugar content.

Ukiha's Divine Climate

In Ukiha City of Fukuoka Prefecture, the temperature fluctuates drastically between night and day during the transition from autumn to winter. This natural flow imbues Taishu Persimmons with their stunning color and sweetness. Each branch produces about 4 to 5 flowers which are pruned down to 1 in order to concentrate all the nutrients. The farmers make meticulous adjustments so each branch gets around 20 leaves to promote photosynthesis for optimal size, taste, sugar content, and color.

A 3-Week Harvest

Taishu Persimmons are rare as they're only available for 3 weeks of the entire year and the yield is extremely limited. Their peak deliciousness is brief, but unforgettable. Enjoying one of these persimmons is a unique experience shared by only a lucky few in Japan and now, in the U.S.
